Shooting in Raw

I have a question for you guys shooting in raw format. I usally shoot in raw - L-jpeg but finding myself using the L-jpeg . The only problem with this is when I want to brighten up the pic I cant seem to adjust the image as well as I can with the raw image . I use Canons DPP. If I convert a raw image to jpeg in PS, will it be the same image as what came out of my camera as the large jpeg? The only issue I usally have is adjusting the f-stop up or down a bit. I would like to make all my adjustments in raw and then convert it to a jpeg. I've converted raw images to jpeg to print and printed the same image from the camera and I cant see any difference. Any insight on this would be appreciated. Sorry for the rambling.
