I can't imaging printing a 9 X 12 size for any client other than a model.

Well, it only takes me several hours to edit approx. 250 images and burn a cd for the client. But, like you, I wouldn't print a 9x12 for anybody but a model who specificlly requests it, but most are quite happy with the 8x10's that they get, especially with the turnaround time. With me, I imagine that with my experience in advertising, when the graphic designer and the image setter is waiting for the image that I'm working on, I'm used to really fast turnaround times while still holding onto the quality. While obviously in the modeling world, we have a bit more time to work with, I think that I'm just used to the really fast turnaround times. Fortunately, I have an excellent local pro lab that from my experience can produce up to about 20 8x10's in an hour.
